Midsummer Biscuits-invented specially for the Fair

So simple even I can make these!

To make about 25-30 biscuits you need......

    150gr/6oz of porridge oats

    100gr/4oz plain flour

    200gr/8oz butter!

    100gr/4oz granulated sugar

    2 level tablespoons golden syrup

1 level teaspoon bicarbonate of soda

    About 15 glace cherries.

OK, got that?       Right, here goes!

1) Mix the porridge oats and flour in a big bowl

2) Take a large pan and melt the butter with the sugar and syrup. Stir in the bicarbonate

Easy so far!

If you’ve got clean hands have a sip of wine! (You have got a glass of wine, haven’t you?)

3) Add the flour and oats and mix well.

4) Form walnut sized balls (it helps if you have a bit of flour on your hands) and place, well apart, on well-greased baking sheets (Don’t worry, they’ll flatten themselves out)

5) Chop the cherries into halves and carefully place on top of the balls. This is the Midsummer Sun!

Now have another sip of wine.

6) Bake in a moderate oven, gas 4, 350 degreesF, 180C for about 11 to 15 minutes

7) Let the biscuits cool a bit before moving them to a cooling grid.

Now, how difficult was that?

So pour yourself another glass of wine!
